Countdown to Whole 30. 2 Days Left.

Ok....

So today is a day of firsts. First time doing a blog and the first time preparing for a Whole 30.  I am so excited.  I really don't like putting processed foods into my body (or my family's), but lets face it, I am a busy-working-homeschooling mom and things happen. But I have made a choice for the next 30 days to eat only real, whole, slow food that is free of sugar, soy, grain, dairy, legumes, and alcohol.  I cant say the kiddos won't have any of these things, but they are giving up sugar in all forms for the next 30 days.  I am proud of them. It won't be easy. In fact it will be downright difficult. But I am hoping that we will all change the relationship we have with our food over the next 30 days.

So far I have read, and researched, and read, and wrote down menu ideas......

And then today.....

I made whole 30 compliant mayo.  

Now let me tell you a little something about making mayo, for those of you who have never done this. Culinary school lied to me.  You don't have to heat the vinegar and spices, or drizzle the oil in slowly with one hand while whisking with another for what seems like an eternity as your arm muscles burn and shake with fatigue. Let me tell you, homemade mayo in less than a minute. Yep 60 seconds to healthier, whole, mayonnaise without a bunch of junk in it.  And the only kitchen tools you need is an immersion blender and a wide mouth ball canning jar. So into the jar goes one large egg.  This egg will remain raw, and if you are worried about that just buy pasteurized eggs.  Pour in 1 TB of fresh lemon juice (or your favorite vinegar), and some salt, garlic, onion powder, pepper, or whatever spices you want.  Want spicy mayo? Ok, add some chipotle powder. The possibilities are endless really. Lastly pour in one cup of extra light tasting olive oil.  Hear me people. Extra light TASTING olive oil. Bertolli makes a good one.  If you use extra virgin or even regular olive oil the taste will be too strong.  Trust me on this.  Ok so now its time for the magic to happen. Put the blender into the jar all the way to the bottom.  Push the button and blend for a full 20 seconds.  You will see the mayo take shape almost immediately. Keep blending and slowly raise the blender. Not all the way unless you want a new wall treatment in your kitchen. When the oil is mostly incorporated I removed the blender, scraped the edges of the jar and blended again for good measure. That's it. Put the lid on the jar and put it in the fridge.  Use it within 2 weeks, if it lasts that long,




Whole 30 Mayo


1 large egg
1 TB lemon juice or vinegar
Generous pinch of salt (and any other spices you may want)
1 cup extra light tasting olive oil

Put egg in bottom of wide mouth jar.  Add lemon juice and spices.  Pour in olive oil. Give it a second to rest.  Put in immersion blender and blend for a full 20 seconds.  Admire the process. Finish blending.  Enjoy!
